ANZAC Biscuits

These iconic biscuits, rooted in Australian and New Zealand tradition, are crisp on the edges and soft in the center—perfect for any time of day.

Ingredients

  • 1 cup plain (all-purpose) flour
  • 1 cup desiccated coconut
  • 1 cup rolled oats
  • ¾ cup sugar
  • 125 g melted butter
  • 2 tablespoons honey
  • 1 teaspoon baking soda (bicarbonate of soda)
  • 1 tablespoon boiling water

Method

  1. In a large bowl, combine all the dry ingredients: flour, coconut, oats, and sugar.
  2. In a small bowl, mix the melted butter with the honey.
  3. In a separate cup, dissolve the baking soda in the boiling water, then add it to the butter-honey mixture.
  4. Pour the wet ingredients into the bowl with the dry ones and mix thoroughly until well combined.
  5. Using a spoon, place small scoops of dough onto a baking tray lined with parchment paper, leaving about 2 cm between each biscuit.
  6. Bake in a preheated oven at 150°C (300°F) for about 20 minutes, or until golden.
  7. Let the biscuits cool on the tray, as they will be very soft when they first come out of the oven.
  8. Once completely cooled, store them in an airtight container.
